10-Minute Frying Pan Chocolate Cake

Rich chocolate cake cooked in a covered frying pan on the stovetop — no oven needed, perfect for summer in the motorhome.
Ingredientes
- 100 g dark chocolate, broken into pieces
- 80 g butter (about 5.5 tbsp)
- 2 eggs
- 80 g sugar (just under 1/2 cup)
- 50 g flour T55 (about 1/3 cup)
- 1 tsp baking powder
- Pinch of salt
- Butter for greasing the pan
Instruções
- Melt the chocolate and butter together in a saucepan over very low heat, stirring constantly. Remove from heat and let cool slightly.
- In a bowl, whisk the eggs and sugar together for 2 minutes until pale and fluffy.
- Pour the melted chocolate into the egg mixture. Fold gently.
- Add the flour, baking powder, and pinch of salt. Fold until just combined — don't overmix.
- Grease the Tefal Ingenio generously with butter. Make sure the bottom and a little up the sides are coated.
- Pour the batter into the cold pan. Spread evenly — it should be about 2cm thick.
- Place the lid on. Put the pan on the LOWEST heat possible. This is the most important step — too high and the bottom burns before the middle cooks.
- Cook for exactly 10 minutes. Do NOT lift the lid — the trapped heat is your oven.
- After 10 minutes, test with a toothpick through the steam hole in the lid. If it comes out clean, it's done. If still wet, give it 2 more minutes.
- Let it cool in the pan for 5 minutes, then slide it onto a plate.
Notas
The SECRET is the lowest possible heat — the lid traps the heat like a tiny oven. If your stove runs hot, use a heat diffuser or double up with a second pan underneath. Don't lift the lid for the first 10 minutes! Same rule as rice — let the steam do the work. The cake will be dense and fudgy, not fluffy like an oven cake — that's the charm.
