Ingredientes

  • 500 g potatoes, peeled and cubed (about 4 cups)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp Maille Dijon mustard
  • 2 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh parsley, chopped
  • Green olives, sliced (optional)

Instruções

  1. Boil the potatoes in salted water for 12-15 minutes until tender but not falling apart. Drain and let them cool for 10 minutes.
  2. While the potatoes cool, make the vinaigrette: mix the Dijon mustard, balsamic vinegar, olive oil, lemon juice, garlic, salt and pepper in a cup. Stir well.
  3. In a bowl, combine the warm potatoes with the diced onion and olives if using.
  4. Pour the vinaigrette over the potatoes while they are still slightly warm — they absorb the dressing better this way.
  5. Toss gently. Let it rest for at least 10 minutes so the flavours come together.
  6. Finish with fresh parsley on top. Serve at room temperature or cold from the fridge.
