Ingredientes

  • 2 chicken steaks
  • 2 large onions, sliced thin
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp sugar
  • Salt and pepper to taste
  • 1 splash balsamic vinegar (optional)

Instruções

  1. Start the onions first — they take the longest. Heat butter and olive oil in the frying pan over low-medium heat. Add all the sliced onions. Sprinkle with a pinch of salt and the sugar.
  2. Stir, then leave them alone for 3-4 minutes. Stir again. Leave again. Repeat. You want them to slowly turn golden then deep amber brown. This takes 20-25 minutes. If they stick, add a tiny splash of water.
  3. When the onions are deep golden and sweet, push them to one side of the pan or remove to a plate.
  4. Turn heat up to medium-high. Season the chicken steaks with salt and pepper. Cook for 5-6 minutes per side until golden and cooked through.
  5. Place the caramelized onions back on top of the chicken. Add a small splash of balsamic vinegar over everything if you have it.
  6. Serve straight from the pan.

Notas

Three rules for caramelized onions: slice thin, low heat, and don't rush — 20 minutes minimum. The sugar helps but the real magic is patience. Use 2 large onions — they shrink a lot. Serve with basmati rice or crusty bread. One pan, one new skill learned! Chef Simão recipe 🧅🍳
